Recipe for Palak Methi Tomato Sprouts Dal Khichdi

Key ingredients and their benefits

Palak

Good source of magnesium, a mineral that can help regulate blood sugar.

Methi

Rich in fibers and phytochemical compounds, they have beneficial effects on improving blood sugar levels in diabetes patients.

Tomato

Increases plasma lycopene levels in diabetes patients and increases the resistance of isolated LDL cholesterol to oxidation.

Ingredients

Wash and rinse the Dal and Rice and keep it for soaking.
Chop the Onion and Tomatoes.
Wash, clean and chop the Palak Leaves.
Heat Oil in a pressure cooker. Add a pinch of Hing and Jeera and let it splutter.
Add the chopped Green Chillies, Garlic, Onion and sauté until they become transparent.
Add the chopped Tomatoes and sauté until it is soft.
Add Red Chilly Powder, Turmeric Powder, Salt and mix well.
Add the chopped Palak Leaves and cover for a minute.
Add the Dal and Rice to it and then add Water.
Cover with lid. And cook for 2- 3 whistles.
Let the steam settle, open the lid, garnish with Methi Sprouts and serve with Curd.
